For Mother's Day I made Julia Child's QUEEN OF SHEBA CAKE! I scoured the internet looking for the easiest recipe I could find, and landed on Mon Petit Four, Reine De Saba Recipe. This recipe gave me the confidence I needed to try a quite difficult cake for the first time (completely by myself) and you know what - I think I nailed it!
The meringue was honestly the most challenging part of the process, which I had to try TWICE, and still couldn't get it perfect ... but like I always say, you'll never grow if you don't challenge yourself. So my encouragement to you this week: try something NEW yes, but something difficult. You'll feel so rewarded in the end for just taking the first step.
INGREDIENTS
What you'll need:
MERINGUE
- 3 egg whites
- pinch of salt
- 1 tbsp granulated sugar, (15 grams)
CAKE
- 1/2 cup unsalted butter, (115 grams) softened
- 2/3 cup granulated sugar, (150 grams)
- 3 egg yolks
- 4 oz dark chocolate (72%), (114 grams) melted
- 2 tbsp brewed coffee, (30 grams)
- 1/3 cup almond meal, (26 grams)
- 1/4 tsp almond extract, (1.25 grams)
- 1/2 cup cake flour, (62 grams)
CHOCOLATE GLAZE
- 2 oz dark chocolate, (57 grams)
- 1/4 cup unsalted butter, (57 grams) room temperature
Extras
- shaved almonds, for garnishing
- unsalted butter, softened, for pan
