The Magic of Pistachio Pudding Mix
The secret ingredient in these pistachio chocolate chip cookies is the pistachio pudding mix. This might sound unusual, but using pudding mix in cookies is a genius way to add moisture and flavor. The pudding mix not only imparts a subtle pistachio flavor but also makes the cookies incredibly soft and chewy. This is because pudding mix contains cornstarch, which helps to retain moisture in baked goods, ensuring they stay fresh and tender for days.
Pistachio pudding mix also gives the cookies a lovely green hue, making them visually appealing and perfect for occasions like St. Patrick's Day or Christmas when green-themed treats are in demand. Plus, the combination of pistachio and chocolate is a match made in heaven. The slight saltiness and nuttiness of the pistachios complement the sweetness of the chocolate chips, creating a balanced and satisfying flavor in every bite.

Step-by-Step Guide to Making Pistachio Pudding Cookies
Begin by preheating your oven to 350°F (175°C). Line your baking sheets with parchment paper or silicone baking mats to prevent sticking.
In a large mixing bowl, beat together the softened butter, sugar, pudding mix, eggs, 1 Drop of Mint Gel Color and salt together until well combined.
Add in the extracts, baking soda and flour, then mix again until combined and dough consistency starts to form.
Fold in the first bag of Chocolate Chips. Using a spatula, gently fold the chocolate chips into the dough. Make sure the chips are evenly distributed throughout the dough.
Scoop and Bake: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
While cookies bake, warm up your chocolate chips with 4 cocoa butter wafers - this will create a silky chocolate for our drizzle
Chop up 1-2 cups of pistachios, too.
Once the cookies are done, let them sit for about 10 minutes to cool and then add your chocolate drizzle and chopped pistachios.
And now, DIG IN AND ENJOY!
Tips and Tricks for Perfect Pistachio Chocolate Chip Cookies
Room Temperature Ingredients: Ensure that your butter and eggs are at room temperature before you begin baking. This helps the ingredients to combine more easily and results in a smoother dough.
Don’t Overmix: When adding the dry ingredients to the wet, mix just until the flour is incorporated. Overmixing can lead to dense, tough cookies.
Chill the Dough (Optional): If you have time, consider chilling the dough for 30 minutes before baking. Chilling helps to solidify the fats in the dough, leading to thicker, chewier cookies. We didn't feel it necessary with this particular dough, however!
Use Good-Quality Chocolate Chips: The quality of your chocolate chips can make a big difference in the final taste of your cookies. Opt for high-quality chocolate chips with a high cocoa content for the best flavor.
Experiment with Add-Ins: While chocolate chips are a classic choice, feel free to get creative with your add-ins. White chocolate chips, even incorporate the pistachio nuts into the cookie dough!
