Let's learn how to put luster dust on chocolate! The hardest part about coloring chocolate topically, whether painting or dusting, is that chocolate has fats and oils that inhibit even coating. But we've got a great hack for you today! Using our brand new COLOR SOLUTION and STERLING PEARLS, we will demonstrate how to achieve the most brilliant and even metallic finish EVER onto chocolate treats!
This is a two-step process, but well worth the effort. We will begin by creating an edible paint using our Color Solution and Sterling Pearls, and end by polishing the treat with the same luster dust. The result? A most intense sparkle you've ever seen on any confection!
Let's start by mixing the Color Solution with a Sterling Pearl (edible luster dust):
The consistency you are looking for when mixing The Color Solution with Sterling Pearls is like any acrylic paint. Thick, but smooth without clumps. This consistency will help in adding luster dust on chocolate.
Once you have the consistency just right ... it's time to lightly paint on the first layer of Sterling Pearl! Don't worry if you have streaks, just focus on even coating your confection.
After 1-2 minutes of this first layer drying, it's time to grab a soft dusting brush to finish the job! You can find multiple fluffy dusting brushes in our best selling CONFECTIONARY PAINT BRUSH SET. For this tutorial, we chose the small circular dusting brush (also great for applying "cheeks" on cookies) and it worked like a charm!
In this photo you can see the incredible difference between the bottom layer of our chocolate treat and the top 3 layers that have been dry dusted! The moisture from the painted layer is helping the polished layer of luster dust adhere and POP with shine! A finish you could never achieve by simply dry dusting edible luster dust or even adding it to a mold before pouring chocolate.
So now - let's finish off these chocolate trees with a few heart sprinkles and THE BEST EDIBLE GLITTER, DiamonDust!!!
