I wanted to make a delicious holiday dessert all on my own, so Mint Oreo Truffles to the rescue! I come from a family of bakers and just happened to marry one of the BEST cake decorators in the United States! So I guess it was fate that I would eventually want to partake in this delicious past-time. However, with Spina bifida it's not so simple - counters are often too high. Carrying ingredients is often impossible, I walk with forearm crutches, and you can forget about me lifting heavy duty tools like a Kitchen Aid Mixer!
But I've never let all of these limitations get me down before, and have always figured out how to "make a way" for myself.
Independence is incredibly important to me, probably because I have needed help from so many my entire life. Thank God I've been surrounded by loving family, friends and doctors for 40 years, truly, but this time ... I wanted to do something mostly on my own for a family gathering last Thanksgiving.
Which led me to Oreo truffles! With this heavy duty food processor (thanks Eddy) I am able to do most of this process independent of his help. So if I can do this, you my friend, can do this. :) So let's begin.
The thing I love most about Oreo Truffles is how a tiny bit of vanilla and cream cheese makes all the difference in flavor! It truly tastes like a fudgey, vanilla-y DREAM once combined with oreos! And you can add any exotic flavor to these, by the way, like Peppermint or Orange extract? So yummy for Christmas!
For today's video I decided to take one step out and just use the Mint Oreo Truffles from the start! So glad I did, too.

But let's start with the recipe.
This video is step by step instructions from our Halloween Truffles made two years ago - all instructions apply to today's Truffles! With the exception of using Mint Oreos instead of regular Oreos. You can also use regular Oreos and add in peppermint extract!
EASY Oreo Truffle Recipe
This is truly such an easy recipe! All you do is crush the Oreos into crumbs (we use a food processor), then add all of the ingredients together in a separate Kitchen Aid (or whatever brand you have) mixer!
You may want to chill the mixture before scooping them into the little balls - but you don't have to. It is necessary, however, to chill the balls in the freezer for at least 45 minutes - 1 hour, or overnight like we did. This will help keep the mixture firm for as long as possible while dipping them all in warm, tempered chocolate.
You may have to freeze oreo balls in the process if they start to warm up too much, so keep them on that baking sheet ready to pop back into the freezer! You'll know when they have gotten too warm, they will begin to slide off your scribe when trying to dip them.

- 14 oz Oreo Crumbles (Or Mint Oreos used for the Christmas Truffles!)
- 1 package of cream cheese
- 1 tsp vanilla
- If you use regular Oreos, add 1/2 tsp peppermint extract or add to your taste :)

Create Holly Fondant Pieces for a Festive Touch!
Or you can use sprinkles, which will be a bit easier. You will want to have some pre-colored white chocolate, Choc Elite Ruby Red is AMAZING for coloring white chocolate! Use those drizzles to adhere the fondant pieces to your Mint Oreo Truffles! Or simply use some festive sprinkles, just make sure they're on the smaller side so the sprinkles don't overwhelm your truffle.
To make the fondant pieces simply grab a festive mold from our site, and dab in a little cornstarch using a fluffy brush! Them flip the mold upside down tapping out the excess corn starch. Then take your fondant and start pressing it into the mold, ensure there's not too much fondant so the design is fully captured. You can also take a small offset spatula to skim across the top of the mold to cut off the excess fondant.
We like to paint our fondant pieces with Elite Paint Powders and The Color Solution, but you can also use ready-made fondant like Satin Ice!

CREATING EDIBLE PAINT

Making edible paint is a CINCH with our Color Solution (click here)! It is an alcohol-based product with gums inside of it to help LOCK IN THAT COLOR! Unlike Everclear or other spirits, making edible paint can often flake off once dry ... but not with The Color Solution! Ed formulated this product for 9 months, working hard to ensure it will not rub off of your confections once mixed with our Painting Powders (click here) or Luster Dusts (click here)!
Consistency is KEY! You will need a consistency that mimics acrylic paint. This consistency will be not too thick, but not too thin either. Look for some movement in your paint palette to ensure it can be easily spread on top of your royal icing cookie through practice. This will give you the absolute BEST results when creating edible paint for cookies, chocolate treats and cakes!
