The Fall Luster Dusts We Love!
Fall is the perfect time to test decorating macarons with luster dust because of all the beautiful, RICH tones we offer! Did you know we have over 70 edible luster dust colors to choose from? That's what happens when you've been manufacturing this product for over 30 years!
Cappuccino is one of the most unique tones we make, as it is similar to ivory, but not as yellow. It actually contains a little yellow and a silver mica mineral, which then results to a very light brown metallic finish. It's a great alternative for having an off-white pearl, as opposed to Ivory which will always be more yellow in tone. It also provides a rich color alternative to a bright white pearl, like Super Pearl. Cappuccino is much more rich, and a true off-white pearl.
Frosted Green is a deep, rich green tone with elements of a silver and green pearlescent - resulting in a bright affect on a dark, deep base. Frosted Green Luster Dust is the most perfect tone for not only fall, but Christmas! We love this rich green tone, as it reminds us of Christmas Trees and Holly Leaves.
Light Brown Luster Dust is truly unique, as it can appear to be a very rich gold tone - especially when painted on yellow icing or a yellow-gold toned macaron! This is demonstrated in the video above, too.
Bronze Luster Dust contains red pearl, which is why you see the beautiful undertones of what you might call a mauve or burgundy. This gives almost a "mahogany richness" to our special luster dust, and the shine is dialed down because of that unique red pearlescent.
Almond is close to Bronze Luster Dust, but much brighter in shine! It has the same red undertones, however, it contains a gold pearlescent, which is why it appears brighter than Bronze in our above demonstration.
And finally Ruse Luster Dust, Ed's personal favorite, is the perfect red tones pearl for all of your Christmas and fall cookies and cakes! We love this color to get that "red luster dust" feel - but it is much earthier than a traditional Christmas Red, which we believe makes it that much more spectacular!
How To Use Luster Dust
Ed has been in this industry for 30+ years, and he knows what makes luster dust 100% safe for consumption being an FDA Registered Manufacturer! So let's chat about that, first. Food safe luster dust is made up of two main ingredients: FDA Approved Food Coloring and the natural mineral, mica. When you see luster dusts that state they are 100% edible, yet look highly metallic, that is cause for concern and you should reach out directly to the manufacturer of that product to verify it is truly FDA Compliant.
If Luster Dust is FDA Compliant, it will contain 3 things: List of ingredient, Lot Number and Expiration Date. If any of that information is missing from the label of the luster dust - it's safe to assume it is NOT FDA Compliant and should never be used on desserts that are going to be consumed by yourself or your customers.
The FDA has been cracking down on bakeries more and more that use Highlighter Dust on confections, as that particular product often contains non-ferrous metals. Which are obviously, not safe for consumption.
Luster Dust can be used to dry dust any confection including chocolate treats, fondant cakes and pieces, cookies and more!
However, it is much more popular as and edible metallic paint and we will teach you exactly how to make that next! Perfect conversation for decorating macarons with luster dust!

DIY Luster Dust Paint
Making amazing edible luster dust paint (which yes, is also edible metallic paint) is a CINCH with our Color Solution (product here)!
The Color Solution is an alcohol-based product with gums inside of it to help LOCK IN THAT COLOR! Unlike Everclear or other spirits, making edible paint can often flake off ... but not with The Color Solution! Ed formulated this product for 9 months, working hard to ensure it will not rub off of your confections once mixed with our Edible Painting Powders (click here) or Edible Luster Dust (click here)!

An additional tutorial on decorating macarons with luster dust is found here! We taught Nicole @baketoujour how to paint The Color Solution first, and then going back to dry dust that luster dust on top. This technique is fabulous and works well, too! But if you prefer to make your own edible luster dust paint - that's what the above tutorial is for!

While we're here, let's chat about Coloring Macaron Batter!
Let's shift our focus from decorating macarons with luster dust to COLORING MACARONS! Which is as equally important topic.
Our food colors, The Master Elite Collection, are MOST popular among macaron makers! The reason? Well, when you add gel colors in excess it can ruin the integrity of your macaron batter. And let's be honest, macaron batter is HARD ENOUGH without ruining the consistency! That's why MASTER ELITES are often the answer! You can add as much (but we don't recommend TOO much ;)) Master Elite Color as you want, and because they are a dry colorant - they WILL NOT AFFECT THE BATTER!
However - you need to first ACTIVATE the color! So for macaron batter, you will want to add the color into your egg whites as soon as possible. I will post some additional macaron tutorials HERE!
And Master Elite Food Colors are INCREDIBLE for almost any sugar art medium! See our FULL TUTORIAL on Master Elites HERE. As you may have noticed, Master Elites are raw pigment food colors and the color you see in the jar is not ultimately the color you will get when using inside of your confection! They must be activated by moisture. The Master Elite will bloom instantly when in contact with moisture!
Do our new gels work for coloring Macaron Batter? You bet they do! Check out Jyoti's full tutorial on using both collection (Master Elites and Gels) to color your macaron batter:
